Bolo Merengado | Meringue Cake

Um bolo muito fofo, sem fermento, com um toque de canela, recheio de mascarpone, mel e compota de mirtilos e uma cobertura de merengue. Preciso dizer mais?

INGREDIENTES

-100 gr Farinha com fermento
-100 gr Amido de Milho
-6 Ovos
-150 gr De Açúcar fino
-90 gr Manteiga derretida (arrefecida)
-1 Colher de sopa de Canela
-Sementes da Vagem de Baunilha
-3 Claras
-100 gr Açúcar
-1 pitada de Sal
-250 gr Mascarpone
-3 Colheres de sopa Mel
-Compota de mirtilos
-100 gr flour with yeast
-100 gr Cornstarch
-6 Eggs
-150 gr caster sugar
-90 gr melted Butter (cooled)
-1 Tsp Cinnamon
-Seeds of a Vanilla Pod
-3 Claras
-100 gr Sugar
-1 Pinch of salt
-250 gr Mascarpone
-3 Tsp of Honey
-Blueberries Jam


PREPARAÇÃO
 -Ligar o forno a 190ºC e forrar com papel vegetal 2 formas circulares de 23 cm
-Peneirar a farinha e o amido de milho para uma taça
-Bater os ovos em banho-maria com o açúcar até este se dissolver (atenção que a temperatura da mistura não deve exceder os 45ºC, ou seja quente ao toque) e, bater depois a frio até triplicar o volume
- Adicionar os ingredientes sólidos cuidadosamente com uma espátula, para não retirar o ar
-juntar 2 colheres do preparado na manteiga derretida e em seguida adicionar esta mistura ao preparado, bem como a baunilha e a canela
-Dividir a mistura pelas 2 formas e levar ao forno durante 20-30 minutos
-Bater o mascarpone com o mel até obter um creme para rechear os bolos
-Depois de frios, barrar um dos bolos com a compota e o creme em cima, e sobrepôr com o outro
-Para a cobertura fazer um merengue italiano, colocando num recipiente em banho-maria as claras e o açúcar
-Mantendo sempre o banho-maria em lume brando, mexer delicadamente as claras, para dissolver o açúcar e não cozinhar as claras, verificando a temperatura das claras no pulso (não deve sentir quente)
-Retirar do lume quando a temperatura estiver aceitável ao toque e bater as claras em castelo, começando na velocidade mais baixa e aumentando gradualmente
-Cobrir o bolo com o merengue a gosto.



PREPARATION
-Turn the oven to 190ºC and line with parchment paper 2 circular shapes of 23 cm
-Sift flour and cornstarch to a bowl
-Beat the eggs in a double boiler with the sugar until it dissolves (observe that the temperature of the mixture should not exceed 45 ° C, that is hot to the touch) and then hit, out from de double boiler until it triple the volume
- Add the solid ingredients thoroughly with a spatula, not to remove the air
-Add 2 tablespoons of the mixture in the butter, and then add the two mixtures, and the vanilla and the cinnamon
-Divide the mixture by 2 shapes and bake for 20-30 minutes
-Beat the mascarpone with the honey until it’s smooth to fill the cakes
-Spread one of the cakes when cold, with jam and cream on top and overlay it with another cake
-For the topping make an Italian meringue by placing a container in a water bath whites and sugar
- Keeping always the water bath over low heat, gently stir the egg whites to dissolve the sugar and egg whites not to cook, checking the temperature of them  with the pulse (should not feel hot)
-Remove from heat when the temperature is acceptable to touch and beat the egg whites, starting at the lowest speed and gradually increasing, until you get pics
-Cover the cake with the meringue to taste.
